That mycelium dont look good Dont let the perlite get drowned like that; still water atracts contaminants. Start with brf cakes. Have patience. As for this, clean up the tub with detergent and rinse well, put new perlite in, place the trays. Place a moist paper towel over the substrates. Cloose the lid, leave with a little hole for air exchange: give it 13 days. wish for the best. Todo lo que quiero es que me recuerdes siempre así...amándote. Not sure if you grokked the last post... You could put paper towels on it, or anything else you want if you are trying to accelerate the growth of the mold or whatever that is in the tray. Personally, I'd toss it, sterilize the area and all my equipment, see if i can figure what went wrong and start again. I'm not an expert, but am fairly certain that is anything but psilo myc... I’m by no means a mycopro but here’s my advice on fruiting easy. I did not think of this myself I saw another person recommend it and I happened to have the same tote already. ‘Ziplock weather tight box’ if you turn the lid upside down it sits on the top edges very flush but has 4 tiny thin gaps that provide all the FAE(fresh air exchange you need). I had my bulk substrate in baking pans like yours. All I had to do was mist every now and then and watch the magic happen.
I’ve read about people getting their mono tubs dialed in to where they hardly have to do a thing.
Don’t give up. Read everything you can then implement. Nothing wrong with following a proven tek.

If you aren't on Shroomery or Shroomology, those are both far better resources to read up on what you're doing, maybe even the related reddit forums. Nexus rocks if you want the state- of- the- art down low on DMT, but those other places have better access to knowledge humans who are practicing and actively answer questions. Again, I'm not qualified to give advice on your question, but there do seem to be some tweaks to existing TEKs that are working for alot of people that are alittle less labor intensive, which I'm not recalling details of, that you can read about in those places. What the above talks about seems to be one of these. What is your sterile practice? I recently blew 12 BRF jars because the actual spores weren't collected and stored properly. I'm looking into a tiny, tent style covered unit that several tubs can be placed in, and that keeps acleaner environment. Sine experientia nihil sufficienter sciri potest -Roger Bacon *γνῶθι σεαυτόν*

sterilize a fork, scratch the surface of that mycelium, add pre-sterlized mix of cocopeat and vermiculite 1cm thick on top, keep at 30C until you see little white rhizo mycelium clawing its way to the top, drop to 23C , if you have enough filtered air exchange they should pin 99% humidity (not over saturated, discard the perlite and just spray water from time to time) 12 on 12 off indirect light

How long have they been in fruiting conditions? Sometimes myc just stalls
Generally, when switching to fruiting conditions you want to go from a relatively high CO2 environment to a low CO2 environment, introduce regular FAE, keep the mycelium (or casing) moist but not wet, high humidity (depends on your temp, but generally >90% RH), constant rate of evaporation and a 12h light cycle.
Balancing all those things with whatever fruiting chamber you're using will take time, practice and failures. IMHO, switching from colonization/consolidation is best done by making the environmental changes quite pronounced to trigger fuiting.
Good luck.
