Can you use yellow tinted crystals just fine when converting to a salt or do you have to use recrystallized white ones? It seems like you can but that it results in an amber colored salt.

Is this true?

It'll be just fine. You might even notice that some of the yellow stays in the acetone effectively cleaning your spice. Your salt might have just a hint of yellow/tan but it'll be fine to use.
