AFAIK the spice is very stable in acetic acid. If anything, letting it sit in the acidic soln should improve the extraction as it would lyse the cells and free-up more of the goods. I think Icehouse does a vinegar soak prior to the usual STB extraction. Kind of a hybrid A/B.
I am running a test of a several month long vinegar soak on some MHRB to see if it makes any difference myself.
