A 1 year old peyote will be 1 cm if you pamper it. And low potency.
Grafting to pereskiopsis can give you a 6 cm peyote in a year, one that will taste like a cucumber until its on its own roots for a year.

I think most people are reluctant to eat young cacti. It's akin to eating the goose that laid the golden egg.

That said I think that secondary alkaloids take time to accumulate in the tissues and so the worth of very young cacti is not in how potent they are but in the promise that they hold for the future.

Growing cacti from seed is a game of patience.

Starting from seed and growing fast, lack of potency will probably be standard, at least for mescaline bearing cacti.
Storing a cut cactus log in the shade for several months is reputed to increase potency (even in already potent cacti) so its theoretically feasible to grow a bunch on pereskiopsis stock and age them on a shelf for 6 months. But given the effort involved, and the 15-18 months, most people would just buy a few bridgesii logs if the harvested cactus was all they were after.
People grow cacti either because they simply like growing cacti or because they are very patient.
Many peyote growers never even eat peyote.
