I had a problem similar to yours with my extract.(Nowman's Tek)
If you can put some bags of ice(I used giant freezies haha) around your jars to transfer the cold better then get ready before you even pull the jars out of the freeze maybe do one jar at a time. Pour all the solvent through a filter and in another clean container and evap down to at least half it's original volume then freeze again.
If your using mason jars they can be kinda hard to dry quick enough so some of your crystal is probably re-dissolving. Use square/rectangular glass food storage containers they are easier to dry and scrap clean.
you could also pour off your solvent then place your jars back in the freezer upside down till they dry completely but this will take a bit longer but no risk of crystals loss.
I just did an extract using Nowman tek and got 1.5g of spice from 117g of mimosa so the tek is sound.
