Reduce Brew Next Day Options

Hello i hope you dont mind me being brief its just ive been standing in my kitchen for over 12hrs now and im tyoing with one hand as i stir my brew. 3x3 with quite a lot of water to be reduced (2ltrs?) caapi and Vidris. Is it possible for me to leave this in the pan unreduced as im shattered and need to sleep.

Can i reduce it in 12hrs time say?

sod it im gonna have to leave it. noooooo i cant do that. 12hrs of tender care and preparation. I dont want to screw it up at the final hurdle. I'll keep stirring and hope for a knowledgable person to come along.

quite handy actually as ill freeze whats left of my plants and do a quick cook with it when i get up and add it to what ive got. I will read up more on that.

leaving it will be fine, if i brew up in the week i normally do a brew per day and bottle each one and pop it in the fridge, after 3 days of brewing (weds/thurs/fri) i add them all together and reduse into a drinkable amount on the saterday and consume on the saterday night.

there would only ever be a problem if the brews went moldy, but i wouldnt think thats gonna happen over night.
