question 2. once I am about to agitate it for the last time how long does it usually take to be ready for extraction?

question 3. After I separate the layers could I just leave it out to evap or is it a must to put it in the freezer? And if so do you need a tight lid jar or does it matter?

OK

1. You can agitate/shake/roll as long as you want (the idea is for the solvent to come in contact with as much of the mix as possible but since it wants to slide across the surface it needs to be agitated.) You can shake hard if you want but it will form bubbles and takes a bit longer to separate.
Once it has separated...do it again. I just give it a shake and roll every time I pass the jar.

2.After an hour or 2 of passing and shaking...let it settle until you see a clear distinction between layers.(It picks up the spice as soon as it 'touches' the lye mix so once it settles it wont 'draw up' any more)
Now you can pull

3.The Freezer is the best way (IMO). If you leave to evap naturally it takes forever (unless you put it in a flat dish and blow a fan across it for an hour) and the end result is not white and pure.
Best to use a glass roasting dish if you can get one (so much easier to scrape later..I use food wrap to cover the dish...pulled tight)
If you have to use a jar...put the lid on...it will stop water vapour getting into the jar and turning to ice...also stops your chicken from tasting like naphtha...

Its tempting to keep taking it out and looking at the crystals forming...but just leave for at least 18 hours...the xtals will 'crash out' of the solution and settle on the bottom and sides and should adhere nicely.
After that pour out the Nap (reuse if you want for other pulls) and 'Fully dry' the result (drain upside down till all the solvent runs out and blow a fan over it if you can.
If the crystals are sitting in any solvent/liquid they will dissolve back in at lower temperatures...so speed of drying is key here..
If you have no fan...leave for a good long time in a cupboard (on its side to drain) with a piece of foil/paper as a lid (stops the dust but still evaps) until it no longer smells of solvent and the xtals are dry.(You will know if they are still wet when you scrape...they may be a bit gooey though...this is normal but drier the better.)


Then scrape up and Enjoy...!
